REPORTS TO: Lodge Manager  


Direct the preparation, seasoning, and cooking of salads, soups, fish, meats, vegetables, desserts, or other foods. Plan and price menu items, orders supplies, and keep records and accounts. Supervises and participate in cooking and baking and the preparation of foods. Writes weekly schedules according to business and projected goals. Uses labor dollars and menu costing programs to price labor and food cost percentages. Must participate in checking of all purchased supplies for quality and account for each delivered item.

Qualifications and Experience:

  • Diploma in Hotel and Catering Management
  • Minimum 4 years relevant experience in a similar role from reputable hospitality organization
  • Thorough understanding of hotel ethics
  • Good preparation of Menus

REPORTS TO: Lodge Manager  


The STORES CONTROLLER will be responsible for:

  • Stock management of beverages, packing material, cutlery, crockery, linen store etc.
  • Issuing and receiving of stock
  • Determining correct stock levels are maintained
  • Liaise with supplier’s representatives and sourcing of products
  • Reporting on damaged/broken equipment
  • Receiving of deliveries ensuring correct quantities matches delivery note/invoice
  • Packing of received goods/beverage in store
  • Assist with the collection of leftover stock after functions
  • Control the movement of stock
  • Monthly/Annual Stock takes
  • Neatness of stores at all times
  • Checking on expiry dates of stock

Qualifications and Experience:

  • Senior Certificate (Grade 12)
  • Tertiary qualification would be an advantage
  • 3 Year’s experience in stores and stock control
  • Proven track record in the hospitality procurement arena
  • Traceable references
  • Numerical skills

  • Excellent verbal and communication skills
  • Computer skills – Excel ( prerequisite) and Pastel

REPORTS TO: Lodge Manager  


Serves visitors by greeting, welcoming, and directing them appropriately; notifies company personnel of visitor arrival; maintains security and telecommunications system.

Receptionist Job Duties:

  • Welcomes visitors by greeting them, in person or on the telephone; answering or referring inquiries.
  • Directs visitors by maintaining employee and department directories; giving instructions.
  • Maintains security by following procedures; monitoring logbook; issuing visitor badges.
  • Maintains telecommunication system by following manufacturer’s instructions for house phone and console operation.
  • Maintains safe and clean reception area by complying with procedures, rules, and regulations.
  • Maintains continuity among work teams by documenting and communicating actions, irregularities, and continuing needs.
  • Contributes to team effort by accomplishing related results as needed.

Receptionist Skills and Qualifications:

  • Grade 12 Certificate, working in a similar role in hospitality industry (a plus) Minimum of 3 years working experience, Telephone Skills, Verbal Communication, Microsoft Office Skills, Listening, Professionalism, Customer Focus, Organization, Informing Others, Handles Pressure, Phone Skills, Supply Management


REPORTS TO: Lodge Manager  

Bartenders will be responsible to prepare and serve drinks to customers. Able to mix and match ingredients in order to create classic and innovative drinks in accordance with customers’ needs and expectations. The purpose of this position is to interact with the lodge guests and ensure they have a great experience at the BAR.

Bartenders should maintain positive guest interactions while accurately mixing and serving beverages to guests and servers in a friendly and efficient manner.


  • Interact with customers; take orders for drinks and snacks.
  • Plan and present bar menu.
  • Serve snacks and drinks to the customer.
  • Check identification of the guest to make sure they meet age requirements for purchase of alcohol and tobacco products.
  • Mix ingredients to prepare cocktails and other drinks.
  • Mix drinks, cocktails and other bar beverages as ordered and in compliance with hotel standard drink recipes.
  • Prepare alcohol or non-alcohol beverages.
  • Service Wine and Beer to guests.
  • Arrange bottles and glasses to make attractive displays.
  • Assess customers’ needs and preferences and make recommendations
  • Ability to Sell or influence others for up selling and suggestive selling.
  • Provide recommendations and suggestions to guest for choosing Drinks and Snacks.
  • Serve customers in a friendly and helpful manner.
  • Keep the bar counter and work area neat and clean at all times.
  • Provide guidance to guests on resort activities, dining options and general resort and Regional information.
  • Determine when a customer has had too much alcohol and if required refusing any further serving on a polite way.
  • Demonstrate a thorough knowledge of food and beverage products, menus and Promotions
  • Handle and move objects, such as glasses and bottles, using hands and arms.
  • Clean up after customers and clean work area.
  • Clear ashtrays as and when required.
  • Wash glassware and utensils after each use.
  • Maintain a clean working area by sweeping, vacuuming, dusting, cleaning of glass doors and windows, etc. if required.
  • Maintain liquor inventory and consumption.
  • Collect payment for drinks served and balance all receipts.
  • Handle an assigned house bank and follow all cash handling procedures as per lodge standard.
  • Prepare inventory or purchase requisitions as needed to replenish supplies.
  • Ensure that the assigned bar area is fully equipped with tools and products needed for Mixing beverages and serving guests.
  • Stay guest focused and nurture an excellent guest experience
  •  Comply with all food and beverage regulations
  • Perform other duties as and when assigned by the lodge management.


  • Grade 12 certificate, Minimum of 3 years in a similar role in hospitality industry, Must be able to communicate in English writing and speaking and other languages are advantages. Good personality and Positive interpersonal skills required.


Previous bartending experience required in a mid scale or Luxury property. Experience in handling Point of sale (POS) terminals and Stock & Inventory management software.
