JOB PURPOSE
The Chef is responsible for preparing, cooking and presenting meals for mining site personnel, in strict compliance with food safety standards (HACCP), hygiene, quality, quantity requirements and company catering procedures.
KEY RESPONSIBILITIES
1. Food Production
- Prepare and cook meals according to menus approved by the Head Chef.
- Follow standard recipes, portion control and special diet requirements (diabetic, vegetarian, medical diets, etc.).
- Ensure food quality, taste, presentation and correct serving temperatures.
2. Hygiene, Safety and Quality
- Strictly apply food safety, hygiene and sanitation standards (HACCP).
- Maintain cleanliness of workstations, kitchen equipment and production areas.
- Participate in internal inspections, audits and HSE / Food Safety checks on site.
- Immediately report any health, safety or food safety non-conformity.
3. Raw Materials and Stock Control
- Use food ingredients efficiently to minimize waste and losses.
- Respect cold chain requirements and storage procedures (FIFO / FEFO).
- Report any stock shortages, damages or quality issues to the Head Chef.
4. Organization and Discipline
- Comply with work schedules and site rotation rosters.
- Work collaboratively with other cooks and kitchen staff.
- Adhere to company policies, site rules and disciplinary procedures.
5. Reporting
- Accurately complete daily production and kitchen records.
- Escalate operational challenges or incidents to the Head Chef.
Qualifications & Skills
- Diploma or Certificate in Food Production or related field
- Proven experience as a Chef
- Strong leadership and team management skills
- In-depth knowledge of food safety and hygiene standards
- Creative approach to menu development and presentation
- Excellent cost control and budgeting skills
- Ability to work under pressure and meet service deadlines
